
Getting the Heat Right in Smart Kitchens
Let’s talk about keeping bread warm. It sounds simple, but anyone who’s ever had a soggy crust or a rock-hard roll knows it’s actually a bit of a nightmare. That’s why we’ve leaned into shortwave infrared lamps. The goal here is simple: keep that crust crisp while the inside stays soft. These aren’t your average lightbulbs. They’re precision tools built for a very specific job. Power and the “Burn Out” Problem When we pick a lamp, we look at how much space we’re actually heating. We want high wattage density because it means the oven hits the right temperature in seconds. No waiting around. But here’s the catch: you have to be obsessive about your voltage. Whether it’s 220V or 230V, it needs to match your power supply exactly. If you push too much current through a tube that can’t handle it, the filament just snaps. End of story. The Build: Quartz and Halogen We use high-purity quartz glass because it lets the infrared heat pass through without getting in the way. And we usually fill them with halogen gas. Why? Because it stops the filament from evaporating too fast. It basically means the lamp lasts much longer before you have to swap it out. Then there’s the wiring. We usually go with R7s or Sk15 connectors. If you use the R7s, it’s a simple push-in fit. It makes maintenance a breeze since you can just pop a new one in and get back to work. Plus, if your chassis is a weird size, we can just tweak the tube length and wattage to fit your specific footprint. The Reality of AI Control If you’re using AI to manage your temperature, the heater is going to be cycling on and off constantly. That’s tough on the hardware. All that rapid heating and cooling puts a lot of stress on the quartz. To stop things from cracking, I highly recommend a PID controller. A basic on/off switch is just too blunt for this kind of work. One last thing to keep in mind: these lamps put out a ton of radiant heat. While the bread stays perfect, the rest of the machine can get scorching. You’ll want to spend some real time on your ventilation and insulation. Nobody wants a customer burning their hand on the outside of the oven.
